The Documentary Hypothesis is controversial because it suggests (in most of its forms) that much of the Pentateuch was written down long after the events it claims to cover (perhaps up to 500 yrs. after the life of Moses), and implies that much of the material is more of a legendary than historical character. While I don't necessarily attribute the entire Pentateuch to Moses, I definitely see it as being in its final form by at least 1000 BC (the time of David). I'd like to write more on this at some point, but for a good rebuttal of the D.H., I would invite you to read the following article on Ken Collins' website: www.kencollins.com/bible-p2.htm
